Indian food is incomplete without achar. Hari mirchi ka achar has strength to enhance the taste of the simplest food to delightful meal. This achar is mostly found in every Indian house.

Remove the head of chillis and give a cut. Then in a kadai dry roast on low flame for a minute jeera, rai, methi, saunf. Cool completely, and blend to slightly coarse powder.
Transfer the mixture in a big bowl and also add in turmeric, salt to taste. Mix well and put mixutre in chillies equally.
Now heat mustard oi for more flavours. Once the oil is hot, add in pinch of hing. Allow the oil to cool completely and pour over chillies. Mix well to combine all the ingredients well. Also add in vinegar as it acts as preservative and stores for longer time. Mix well and can be kept under sun for 2 hours for better flavours. Finally, hari mirchi ka achar is ready to serve with rice or roti.
To make khatta mittha hari mirchi ka achar one spoon of sugar can be added, which enhances the taste.
